UMBRIAN GRAIN AND LEGUMES

Grain and legumes are among the main ingredients of the Italian traditional local peasant food. They have high nutritional value and high intake of proteins and other minerals and nutrients. These foods are, still, a healthy and varied solution in any kind of diet.

Colfiorito’s crops, grow in a plateau at about 1000 meters, and as well as other Umbria legumes, are growing, during the last years, thanks to the work and passion of some farmers who have contributed to the recovery of some local tastes such as chickling vetch and “roveja”, in accordance with tradition and environment.
